Every year, festival goers are treated to new flavor sensations with our condiment selections as well as some of the signature drinks and food items served at the Festival. Keep the party going at home by recreating these dishes with our handy recipes below.
2026 The Maine Oyster Festival Signature Mignonette Recipe developed by FIORE Artisan Olive Oils & Vinegars
½ cup FIORE Artisan Olive Oils & Vinegars Pink Balsamic
½ cup flambéed La Vieille Ferme Rosé*
¾ cup minced shallots
Ground black pepper to taste
- Flambé the rosé wine in a small saucepan. If fire in the kitchen isn’t your thing bring it to a simmer for 15 minutes.
- Combine the ingredients in a small bowl.
- Chill for at least 2 hours and serve over your favorite oyster.

2026 Gourmet Pepper Mignonette developed by FIORE Artisan Olive Oils & Vinegars
1 cup FIORE Artisan Olive Oils & Vinegars White Balsamic Condimento
¼ cup The Spice & Tea Exchange Gourmet Pepper Blend
- Bring White Balsamic Condimento to a simmer.
- Add the Gourmet Pepper Blend directly to the hot balsamic.
- Allow the mix to steep for at least 3 days for best flavor.
- Serve over your favorite oyster.
2026 Signature Festival Cocktails by ABSOLUT TABASCO (Available at both Freeport Oyster Bar & Lobster Cooker’s Beer Garden during the Festival.)
Spicy Bloody Mary
45 ml ABSOLUT® TABASCO™
150 ml Tomato Juice
15 ml Lemon Juice
10 ml Worcestershire Sauce
1 Pinch Ground Black Pepper
1 Pinch Salt
1 Wedge Lemon for garnish
1 Bunch Parsley & Celery stick for garnish
Red Chilies
Cajun Spice for rim
Rim a highball glass with Cajun Spice.
Fill a shaker with ice cubes.
Add ABSOLUT® TABASCO™ and all other ingredients.
Roll the shaker smooth and strain it into a highball glass over fresh ice.
Garnish with a lemon wedge, red chilies, parsley and a celery stick.
Spicy Tabasco Lemonade
1 part ABSOLUT® TABASCO™
4 parts Lemonade
Ice cubes
Lemon Wheel for garnish
Cajun Spice for rim
Chili Slice (optional)
Rim a highball glass with Cajun seasoning.
Fill your glass with ice cubes.
Add ABSOLUT® TABASCO™
Top up with your favorite fresh lemonade.
Garnish with a lemon wheel and a red chili.
Absolut Citron Soda
40 ml Absolut Citron Vodka
150 ml Soda Water
15 ml Lime Juice
1 Lime Wheel
1 Lemon Wheel
Ice Cubes
Take a lime, slice it in half and squeeze the juice into your glass. You can do this by hand or with a citrus elbow.
Fill your glass with ice cubes.
Add 40ml of Absolut Citron.
Add 150ml of soda water.
Garnish with a slice or wheel of both lemon and lime.

¼ teaspoon ground black pepper
1 teaspoon minced shallot
2 tablespoons of cucumber juice
2 tablespoons FIORE Artisan Olive Oils & Vinegars White Balsamic Condimento
½ cup FIORE Artisan Olive Oils & Vinegars St. Sauveur Field Rose Balsamic
1 tablespoon FIORE Artisan Olive Oils & Vinegars Organic Luna Reserve EVO
3 tablespoons fresh lemon juice
pinch chili flake
2 shakes tabasco
Combine all the above ingredients in a mixing bowl. Serve alongside your favorite Maine oysters. Yield ¾ cup.
2024 The Maine Oyster Festival Signature Mignonette Recipe developed by Freeport Oyster Bar
1/4 cup FIORE Artisan Olive Oils & Vinegars Champagne Vinegar of France
1 Tablespoon FIORE Artisan Olive Oils & Vinegars Siracusa Lemon White Balsamic
1 teaspoon minced shallot
1 Tablespoon fresh/frozen blueberries smashed
¼ teaspoon kelp powder
¼ teaspoon minced Fresno pepper
1 teaspoon fresh lemon juice
pinch ground black pepper
Combine all the above ingredients in a mixing bowl. Serve alongside your favorite Maine oysters.
2023 The Maine Oyster Festival Signature Mignonette Recipe developed by Freeport Oyster Bar
3/4 Cup FIORE Artisan Olive Oils & Vinegars Pink Grapefruit Balsamic
1/2 teaspoon of ground pepper
1 teaspoon of honey
3/4 cup of grapefruit juice
1/2 shallot, finely minced
2 leaves of fresh mint
Combine all the above ingredients in a mixing bowl. Serve alongside your favorite Maine oysters.
2022 The Maine Oyster Festival Signature Mignonette Recipe developed by Chef Barton Seaver
Measure 1/4 cup FIORE Barolo Wine Vinegar and 1/4 cup FIORE Vinoso Wine Vinegar into a non-reactive bowl. Fill your pepper mill or spice grinder with a mix of 1/2 teaspoon each whole black peppercorns, allspice berries and whole fennel seeds. Add the ground spice to the vinegars and mix well. Serve alongside your favorite Maine oysters.
